Associate of Applied Science (A.A.S.) in Advanced Culinary Arts
The mission of the AAS Degree in Advanced Culinary Arts is to give students the culinary skills required for entry into the food service industry with the additional liberal arts education needed for management positions in the food service industry. The program focuses on culinary skills, theory and communication and problem solving skills. The American Culinary Federation (ACF) accredits Stratford’s culinary programs.
The AAS Degree program includes core requirements, elective requirements, and general education requirements. The total requirement is 90 quarter credits and normally takes 60 weeks to complete.
Advanced Culinary Arts Professional Diploma
The mission of the Advanced Culinary Arts Professional Diploma Program is to give students the culinary skills required for entry into the food service industry. The American Culinary Federation (ACF) accredits Stratford’s culinary programs.
The Diploma Program includes core and elective requirements. The total requirement is 60 quarter credits and normally takes 50 weeks to complete.
Oregon Culinary Institute – Culinary Arts Diploma / Associate of Applied Science (A.A.S.) in Culinary Arts

Culinary Arts Diploma
Built around a focused, practical curriculum that systematically takes students through the essentials of working in a commercial kitchen. The subjects and skills taught by chef instructors are what restaurant owners and executive chefs want from their new staff members. The aim is to help students become immediately employable by giving them a solid grounding in the basics, as well as many hours of hands-on practice.
The Culinary Arts Diploma program is comprised of three eight-week terms, plus a 360-hour externship.
Associate of Applied Science (A.A.S.) in Culinary Arts
After successfully completing the Culinary Arts Diploma program, students may transfer to the Wilsonville, Clackamas, and/or Springfield campus of Pioneer Pacific College for three 10-week terms of general education and foundation requirements. This option is designed for students who wish to pursue restaurant ownership and/or management.

Oregon Coast Culinary Institute – Associate of Applied Science (A.A.S.) in Culinary Arts

Location: Coos Bay, OR
Associate of Applied Science (A.A.S.) in Culinary Arts
Offers chef training (basic and advanced) as well as restaurant management skills. After studying the fundamentals of classical and contemporary cuisine and restaurant procedures, students will develop advanced skills in grade manger and a la carte cooking. Students will have the opportunity to choose between a local or distant externship during their final term in the program.
